Ethiopian cuisine is characterized in particular by a wide variety of vegetarian dishes and meat dishes, as well as the use of different spice mixtures (such as mitmita / ሚጥሚጣ / mīṭmīṭā) and injera (እንጀራ / endjära ) as staple foods present in most of the territory. The injera is a pancake with which one consumes other foods using his right hand.
