From the 8th century up until the 15th century Moroccans ruled Spain. This historic region was known as Andalusia, a diverse place where people of different backgrounds and belief systems coexisted for 800 years. After the Spanish inquisition, many of the inhabitants of Andalusia found refuge in Morocco, bringing with them this unique trait of tolerance and cultural richness. Along with these traits, they brought their delicious cuisines, each one inspired by the flavor and spices of the other. This marrying of different tastes is what gives the Moroccan cuisine such depth and uniqueness.
