About CANTEEN YEMMA
Originally from the Ourika Valley in Morocco, Mustapha Khalis, the associate owner of Cantine Yemma, was one of the first to bring Moroccan street food to Paris. A graduate of a hotel school, he set up a first Moroccan caterer with his brother in 2005, followed by a food truck with which he went to festivals and events. Also present on the markets of the bohemian districts of Paris, Mustapha makes Moroccan gastronomy accessible to all, by offering live cooking demonstrations: preparation of couscous, pancakes, sandwiches made with matlouh (typical Moroccan bread) and other flagship dishes of the country.
